| | Description | Use as a dry rub on beef, chicken, pork or seafood. Sprinkle it in your bowl of chicken soup. Or just shake some on for that extra flavor at the table. Jerk vendors in places like Boston Bay, Jamaica, loyally guard sacred family recipes passed on from generation to generation. But at the heart of their formulas lie three essential spices, a holy trinity for jerk maestros. Scotch Bonnet Pepper Scotch Bonnet Pepper Shaped like a Scottish tam or hat, the fiery scotch bonnet pepper ranks extremely high on Scovilles hotness scale. It burns at least three times hotter than cayenne pepper, and has at least 50 times more kick than jalapenos. Grown in Jamaica, the scotch bonnet is related to the habanero chile, and ranges in color from green, yellow, orange and red. It is an essential ingredient in jerk foods, adding its own unique flavor and spiciness. Pimento Berry or Allspice A necessity in jerk cooking, the berry of the evergreen pimento tree is indigenous to the Caribbean. When dried, the berries are dark browni, almost black, and resemble peppercorns. Grind the pimento berries for a flavor that resembles a combination of nutmegi, cinnamon, pepper and cloves. Thyme This popular aromatic herb is a must-have in jerk seasoning. Thyme retains much of its flavour when dried, so Jamaicans often rub the meat with dried thyme leaves. As the meat is slow cooked, the thyme is allowed adequate time for its oil to be released. |  |

Great Jamaican seasoning! Aug 04, 2009
By E. Lowden We bought this when we visited Jamaica and loved it! I put it on chicken, pork, and spicy dips. I hope I can buy more online. Will be awhile before we're back in jamaica.

A great all purpose rub. May 09, 2011
By Ghenghis Terrific authentic jerk flavor, and wont overpower you with heat, but its there And its not as messy as the wet Jerk Rub the Grace company sells, and it won't turn your chicken, pork, or fish green either.
Use liberally, rub it in and put in a ziplock bag overnight if you can wait that long. This is one of my favorites, alongside Prudhomme's Poultry Magic on days when you just need some more heat in your dishes. Also great sprinkled in soups or directly on white beans, pintos, or collard greens. Good stuff!

By Palouse We first bought this seasoning based on a recommendation from a Jamaican restaurant we visited. It did not disappoint. It adds flavor to virtually any meat without too much heat, but is especially good on pork and chicken. I use it on meats that I then put on a smoker, and the combination of the smoke flavor and seasoning is just perfect.

Put this on some Ribs. Turned out good. Use it somewhere between sparingly to moderate. It will quickly over power anything with the heat. That is unless you like really spicy food. The holes are a bit small but i think thats good in a way since the bigger hole would release too much of the hot peppers which are bigger in size. If used in the right amount it will a a nice kick without been to spicy.

By M. Charthern Pretty good seasoning, but I have to say it's been so long that I don't remember what authentic jerk chicken taste like. None the less I still enjoyed this seasoning. It has a unique citrus taste? The only con about this product is that the holes at top are too small to allow all the spices to come out.
